Things to do on a Snowy Day

They say you should be careful what you wish for. And damn it, they were right again. It is snowing again. Just when I though it was going to all melt away I woke up to a winter wonderland that I didn't even know was coming. So in case you're snowed in like me here are a few things you can do today that will make you feel accomplished even if you can't accomplish things you had hoped to accomplish today. Such as using the word accomplish 3 times in one sentence...yes! #imanerd

We just recently scored this gorgeous set of mid-century dressers from Vintage Mid-Century Frederick's booth at Cannon Hill Antiques and I absolutely love them! So last weekend when it snowed I decided it was time to pull out some of the artwork we had piled up in storage to make the room feel a little more complete.

**In case you don't know this about me, I'm a perfectionist and I totally over think things. So it's taken me 4 months to figure out that even if this stuff isn't what I want on the walls permanently, it's okay to go ahead and hang it because the bare walls were driving me nuts! Whew! I'm glad I finally figured it out. Because our bedroom feels so much better.

SO! 1. Pull that stuff out that you aren't sure if you want and just hang it already! Yes you may want to switch it out later but that is okay. A room full of bare walls, on the other hand, not okay.

2. If you're like me and you love baking, then you probably already know that snow days are the best days to bake. It warms your house up, makes it smell good, and gives you that cozy home feeling. I know it's not exactly some grand, new idea that you were hoping for from this post. I mostly just wanted an excuse to share these gorgeous cupcakes my sister made from scratch!

3. Write love notes to some friends you may not get to talk to as much as you'd like. You can get crafty with it, or use some of that stationary that is piling up in your desk drawer. Everyone loves receiving snail mail, like the good kind...not bills. It will definitely brighten their day, and who knows it might lead to a much needed get together.

 4. Clean. I know, this sounds pretty lame. But at the end of the day when you light a candle and plop down on your couch to do number 5, you'll be so pleased that you did. Plus, cleaning can be a great workout for people like me who don't like to actually work out.

5. Find a new series on netflix and binge watch the rest of the night. Or cozy up with a cup a tea and read that book you've been wanting to read but haven't found the time. After all, you had a productive day. ;)

Delicious Mini Pies on a Snowy Day

Let me start off by saying that I love to bake and I seem to have good luck with it. Why would one need luck when baking, you ask? Because I bake like I'm cooking– I start off by carefully measuring my ingredients but I sorta eyeball this and that as things need to be modified. One needs to be able to adapt! Especially in a world of blog sourced recipes that are mismatched together. Gone are the days of following meticulously planned out cookbook recipes– maybe not for everyone but for most.

So it was a snowy day and I felt like making something tasty. You may even have what you need to make these already in your kitchen! I saw these on pinterest but the recipe called for pie filling which I don't particularly care for. They also had a lattice top, and I prefer a crumb topping. I made mine with a peach and mixed berry filling but what is awesome about this is you can use any kind of fruit in this.

So all of that was to let you know that this "recipe" (and I use that word very loosely) that I am about to tell you is a combination of three recipes and is a little abstract. If you are a person who likes something a little more precise, I recommend that you finish reading this and then google another recipe. Ha!

So here is what I used for the filling-
2 12oz bags of frozen fruit
1 c. white sugar
3-4 Tbs corn starch or (6 tbs of flour will work)
1 c. water
2 Tbs orange juice

Crust-
1 package of Pillsbury Pie Crust made 12 mini pies

Topping-
1/2 c. all purpose flour
1/2 c. brown sugar
1/3 c. cold unsalted butter (I only had salted and it turned out fine, most recipes call for unsalted)

I mixed together the sugar and 3 tbs of cornstarch in a sauce pan, slowly stirred in the water* with the burner on medium. I then added the 2 bags of fruit and the orange juice. I felt it was a bit thin so I added another tablespoon of cornstarch. I let it simmer on the stove 7-10 min making sure to stir it every so often.

*I recommend using less water...like maybe 3/4 cup instead. You can always add more water in if it too thick but you cannot take it out. I was sorta straining out the extra liquid as I filled the pies.

While the fruit is simmering, roll out your pie crust. I recipe I found said use a 4" diameter cookie cutter. I had a cup approximately that size and felt it was too small– maybe my cupcake tin was deeper than theirs. I then found a container that was 4.5" and that worked better for me. You can see my little measuring tape in the background! So, test it out before you just start cutting out all your circles. You want to have some crust sticking up past the edges.

Carefully press the circle into the tin. Pinch off the extra dough and smooth it out– it doesn't have to be perfect, I promise. Make sure to check your fruit, you can probably turn it off now and let it cool while you finish filling the tin with dough. Preheat your oven to 350 degrees.

Once the cups are all filled with the dough, take your cooled fruit compote and fill the crusts three quarters full. You want to leave some room on top for your crumble topping and for a little expansion.

To make the topping, throw in the flour, sugar and cold cubed butter. Use a fork to press the ingredients together until it's mixed well and forms little crumbles. If you're struggling to get it to combine, use your hands. Your hands will provide just enough heat to get the butter to combine with the sugar and flour. Now top each pie with a heaping tablespoon of crumble.

Bake the pies 20-25 min or until the edges are light golden brown and the pie begins to bubble.

Friday Favorites- Homemade Valentine's Dinner Edition

So I was a little bit of a procrastinator this week on writing my Friday Favorites post. Sitting here, not feeling so hot for the third in a row, I even thought about not writing one at all. But sometimes procrastination can lead to not having too much time to over think things which can lead to great and sudden ideas like this one!

Date Night Dinner and Dessert!

It's freaking cold outside. It's Valentine's weekend. I still haven't made dinner reservations because the thought of going out and trying to be all pretty and dressed up in this weather doesn't sound that appealing. So in case you're feeling like me and pondering the idea of staying in, here are some great recipes to try on your honey this weekend. We all make pinterest boards stocked with recipes– these are a few I have already tested out and they are definitely husband approved! I am no wiz in the kitchen, so they're totally doable for just about anyone. Plus, they're inexpensive and they'll be recipes you'll want to use again.

What is better during this frigid month than a bowl of hot and hearty soup? I've made this Sausage Bean Soup w/ Pasta three times this winter– it is so good. I'm also not a huge bean lover but I'm telling ya, give this a shot. I am however a huge fan of a one pot meal! Pair it with some biscuits or hearty Italian bread...you know, to clean your bowl with.

You, of course, need dessert! I have two cookie recipes for you. After I made the first one, my husband took one bite, turned around and said to me, "this may be the greatest cookie I have ever eaten." It was a White Chocolate Pumpkin Snickerdoodle. The second recipe is a Pumpkin Chocolate Chip Cookie, that is more of a cake-like cookie that super moist like the top of a muffin. I absolutely love them and they're literally the easiest. Neither of these recipes calls for the full can of Pumpkin so they're great to make together! Plus you can make the Pumpkin Chocolate Chip while the Snickerdoodles dough is chilling.

My Favorite No-Bake Cookie

This cookie is not a no-bake cookie in the traditional sense.  It was once baked, but twas not I who did the baking. These White Chocolate Peppermint Oreos are so pretty and delicious, and you will not believe how easy they are. I'm not a huge peppermint fan but these have just the right touch of mint flavor to combat the sweetness of the chocolate.

Each year for Christmas my family (immediate and extended) do a gift exchange where we draw names- one cousin and one aunt/uncle. This year we decided that we would skip the name drawing and do small/ hand-made gift for each person. I will not say what the lady gift is but I feel safe in saying I made jars of cookies for all the guys.

Really all there is to it is-
Melt white chocolate chips. Dip your cookies halfway in the chocolate. Sprinkle crushed candy canes on top. Voila! I made around 130 of these in about an hour. Not bad.

I carefully arranged 7 cookies in each jar. While they are simple and pretty just like that- I decided to make them more festive. With a little ribbon, a bow and a simple white tag they are suddenly like a party in a jar! I really wanted a gift for the guys that wasn't a food item because I felt that was expected. Even with Pinterest on my side,  I had a really hard time coming up with something. I guess men just really like food. These make a super easy, inexpensive (about $2.15 per jar for EVERYTHING) and delicious gift. Like seriously....they're so good.

You could also come up with different combinations of these treats with other store bought or homemade cookies– sugar cookies dipped in chocolate with crushed Reese's piece might be a tasty combo. Any others you might try?

Things are getting done!

Hello!

It's been too long and I do apologize. So many things are happening and I am just finally finding a little time to write about it. Although I should be doing homework instead. 

So many vendors have been hired since we last...communicated? We had an amazing cake tasting a few weeks back and a baker has been hired! Delicious spice cake and red velvet will be served! I love these two sets of picture...totally different but both simple. Both, I believe, were found at Style Me Pretty.



A photographer has also been chosen and he is just the nicest! Levi and I hit it off immediately and I am so excited that he will photographing our wedding because he's amazingly talented. You should really check him out at his website. He's a little preview...Levi I hope you don't mind!

I chose this picture because I just love the idea of taking the soil (i'm guessing) for each of their hometowns. That would be neat for a couple like Kc and I who live a few states apart!

His style is just so artistic but not overdone which is difficult to achieve not to mention he is the coolest guy! And has great taste in music which is always a good sign!

We've also found a florist! Wendy was down to earth and knew her stuff, which is perfect because I don't really know anything about flowers. I hardly knew what I really wanted other than Hydrangeas and Sunflowers! There will also be a bit of Thistle, Queens Anne's Lace and another yellow flower I can't pronounce or even begin to spell. Our bridesmaids will look a bit like this:

 And I think that's even the same little yellow flowers on the right that I can't name. They look something like that. Our bridesmaids will have yellow and a bit of blue to go with their grey dresses! 

And finally we even have found a caterer! James is so talented. He makes not only the most delicious bbq I've ever tasted he makes yummy brussel sprouts, macaroni and cheese, and more! Every things was just so good, I was relieved to have found someone who was also very down to earth and laid back with such talent.

And Save-the-dates are out! With the exception of a few that need to be whipped up :) No worries, I'll send them this week. Really I'm just stressing over getting out priest in order, we have yet to meet with him because it's so hard to get kc and I both home on a weekend that isn't insanely busy. But it will happen soon. It must! But I'm feeling relieved to have gotten so many other things taken care of. I love being able to cross things off the list! 

Anyway, I don't have any tid bits of wisdom this time just many updates!

Two things I love...

Scout and Kc! In addition to those two...

Two things I love about this wedding is the attention to detail and the photographers ability to capture it!


I absolutely love this shot. I love the warmth, the vintage feel and how romantic it is!


I love that they mixed up their chairs. Sure it's ease to get 100 white chairs but instead the got a few different styles that mixed things up and kept it interesting.  
Everything does not have to match.


The color palette is evident without being overbearing. I love the pink accents AND I love that the photographer took the time to capture each detail. You worked hard on each individual thing so remember them! There aren't any tack effects applied-
just some interesting cropping will do the trick.

I love pie...what more can I say.

I'm currently in the middle of finding a photographer, and we have a few options I just want to make sure that we hire someone who really gets what I want. And I think the fact that I'm a little bit of a photographer myself makes it harder because I know exactly what I want but I obviously can't take them myself! But photography is so important because it is what you will remember this one perfect day by for the rest of your life. So don't be afraid to be specific and get examples of what you like just like you would if you were getting your haircut. Your hair grows...these pictures will last a lifetime. So don't skimp!

A little inspiration!

My dear friend Lindsay sent me a pic of this darling cake that I absolutely love...


Another great wedding feature on Green Wedding Shoes, of course! I also LOVE how they chose to display their pies! I am determined we will have local made pies. :)

So I decided to check out the full post because I could just tell by that cake it was bound to be an amazing wedding. I was right. Here are more images that I found to be inspirational:

 First, can I just say that I love the bridesmaids dresses?! They are vintage dresses chosen by each of the girls to match the color palette! I love the idea, it doesn't look matchy matchy, and that way each person can pick a dress that flatters her own body type or skin tone. 

Second, that bouquet is just beautiful. Enough said.

Third, I WANT that truck. That is what I want to ride around in on my wedding day! How cute!?
Fourth...I need to start designing all the paper stuff probably...

Sweets on my Mind


So I sorta fell off the face of the earth for a little while there. But we all get busy! Kc and I have been in too many states in too few days from South Carolina to Philadelphia to Long Beach Island. But great things have taken place! Like moving into our new and nice and roomy apartment! I can not wait to get decorating. So to be honest the wedding planning was put on a little bit of a pause but it's time to get inspired! By CAKE!

So yes, I'm craving some sweets and therefore thought that I could write a blog on cakes...or cupcakes...or pie? The truth is is I'm not totally sure what I want. I LOVE the idea of pie. It just feels so warm and comfortable and homey to me. But Kc LOVES cake and I think a lot of our family might be a little saddened if we didn't have any. Here are a few beautiful cakes that I love:





All off them beautiful...all of them very different. The third picture reminds me of the dress I really like except the cake may be more over the top ha! But I love that they would go well together. I also really like the idea of having just a small cake to cut with several different desserts to choose from. That way I can satisfy the taste of more of my guest!
I also really wanted to incorporate the bird and mustache theme into our desert by possibly doing cupcakes! So as you can see I'm a little all over the place on this one but I know some cake tastings will get me in order! Not to mention I think it will be Kc's favorite part! ;)
